We are talking about recipes at work lately and that got me thinking. I’ ve never written an article before, but here goes! My stepbrother spent a bit of time in the Amish country area of Pennsylvania.
His wife, who was also there for several months, brought back this recipe which she said was quite popular with the locals. It sounds so good I can’t wait to try it! Here is how she explained it to me…
There’s no sauce involved – just bake it uncovered until done then cover with foil to keep warm while you make your side dishes. If you want chicken, just cut up your favorite parts and bake. If you’re using beef, buy a roast and cut it into chunks.
Amish Chicken Recipe
Ingredients:
1 whole fryer chicken or 4 of your favorite pieces of chicken (you can also use beef)
garlic salt to taste
pepper to taste
Directions:
Preheat oven 375 degrees Farenheit.
Sprinkle the bottom of a roasting pan with garlic salt and pepper then place chicken on top of that seasoning.
Roast for 1 hour or until done, depending on size of the breading.
I usually cover it for half way through cooking time just so meat is more tender and juicy – kind of like crock pot style as opposed to baking as usual.
You’ll know it’s done when you cut into pieces.
If you use a whole chicken, the leg should be moving freely at the joint and juices must run clear.
If using chicken breasts or thighs – pierce with fork in thickest part to make sure there are no pink areas left.
Serve with potatoes, veggies or whatever side dish you like…Enjoy! 😀
